Lemon and thyme pasta topping

Ingredients:
1 lemon
50 grams butter
50ml extra virgin olive oil
5 grams fresh thyme
Method:
For the sauce:
- In a pan mix together butter and olive oil.
- Add the zest and juice of the lemon.
- Let it simmer for a couple of minutes and add the thyme.
For the pasta:
- In a separate pan oil enough water to cook your gluten-free pasta.
- When the water reaches boiling point, add salt to taste and pasta.
- Once the pasta is cooked pull it from the water, drain and add it to your lemon and thyme sauce.
- Let it cook for a minute with any additional required water until creamy.
- Serve on a flat plate.
