Lemon and thyme pasta topping

1 lemon
50 grams butter
50ml extra virgin olive oil
5 grams fresh thyme
For the sauce:
  • In a pan mix together butter and olive oil. 
  • Add the zest and juice of the lemon.
  • Let it simmer for a couple of minutes and add the thyme.
For the pasta: 
  • In a separate pan oil enough water to cook your gluten-free pasta. 
  • When the water reaches boiling point, add salt to taste and pasta. 
  • Once the pasta is cooked pull it from the water, drain and add it to your lemon and thyme sauce.
  • Let it cook for a minute with any additional required water until creamy.
  • Serve on a flat plate.
