True Pesto is made from garlic, fresh basil, pine nuts, extra virgin olive oil, pounded together into a green thick paste. The word pesto means pounded in italian. Pesto is generally accepted to be a Ligurian invention, so much so that is called pesto all genovese. Perfect to be combined with gnocchi, beetroot ravioli and short shaped pastas.
